The Brioche Club – by De Laet & Van Haver x Hemmat The Brioche Club brings butchery craftsmanship back to its essence. Luc De Laet and Peggy Van Haver uphold traditional artisanal methods, resulting in high-quality and wholesome taste experiences. The meat is prepared « nose to tail.” At Wolf, The Brioche Club has created a unique collaboration with culinary talent Matthijs from Hemmat, who was previously featured during a pop-up at The Jane. It’s a tribute to meat and brioche, both fun and trendy: brioche sandwiches filled with lacquered pork belly, accompanied by refined sides such as crispy fries and homemade pickles. They are now also launching delicious Berliner doughnuts, not to be missed especially the caramel edition.
